Replace wheat with     Organic rice
  Kamut
  Spelt
  Millet (in some cases)
 

Unpolished quinoa (grain very rich in protein).  Soak briefly in water to remove any saponin residue.  Quinoa is a grain from Peru closely related to amaranth.  It contains lysine in abundance and also more iron than most grains.

Spelt sourdough bread and unsliced King’s grain bread made at Bernie’s bakery are considered the best by us.
